Wow. While I have taken a bit of a hiatus from blogging for the last couple of months, I have really grown to miss the putting together of blogs to share with all of you. It wasn’t the same prepping food, just to put it in containers to be eaten throughout the week. There has to be a story! And a story I shall give you.

This week, I was pumped to get back in the game. My house was cleaned from top to bottom, Kyari was freshly bathed, lawn was mowed and I even had time to prep this spiced-up chili all before 2pm! Day was made 🙂 Now, here is what you don’t know….

I started to prep for this chili last night, got it all prepped in 20 minutes, put it in the crockpot, and had it turned on low to sit throughout the night. I was cleaning up my mess, and all of sudden I saw smoke and could smell burning plastic! Oh boy, I thought I was burning the house down! I had turned around to the bottom of the crockpot just melting before my eyes! Come to find out, the wire I had plugged into the wall caught on the handle for the stovetop, and turned on the small burner that the crockpot was sitting on! I thought for sure my crockpot was doomed, and my chili would be ruined. Low and behold, I caught it just in time, before it melted the motherboard.

This goes to show you that not all foodies are unstoppable or perfect. We are all human, and life gets crazy. And you may even burn a few things now and then, but all is well that ends well….I survived, barely 😛

So one thing I am sure you all have realized, is while I can make a decent dish to display for readers, I’m also realistic and like my meals simple, and want to give all of you some realistic expectations about meal prep. Quick, easy, and realistic for ANYONE. I try to find things that will work for the busiest of people. And while everything may not work for you, at least some of it might be do-able. When was the last time you challenged yourself a little bit in your nutritional game?

I wanted to be certain that I would have enough on the go options, as my schedule has left me with less time to actually sit down for a meal. But hey, we make it work right? I know a lot of us that deal with this same struggle. The struggle is all too real sometimes, but setting yourself up for success in the best way possible is by doing the little things right. My go-to’s this week were clementine cuties, chicken sausage, the infamous bagged salads, fig bars, and boiled eggs, all from Costco. This store is my jam! Not sure what’s good? Check the labels. Read the ingredients. If you can’t pronounce it, odds are it’s probably not meant to be in your tummy 🙂 If you’re unsure of what’s an acceptable amount of something, read the serving size, and if you have a practitioner that you work with 😉 they may be able to help you with this too.
